Unfortunately the answer is no. Upon deleting your Instagram account your messages will still be present in the inbox of the person you sent your messages to, the only difference is that your profile picture will be removed, and your name will say "Instagram User". The worst part is that deleting your account will also remove your ability to delete your messages from both sides permanently.
If you want the message content of a message you sent to be deleted from your side, and the other person's you must unsend all of your Instagram messages with them.
